I left the “The Big Guy” at home to rake leaves and stuff giant brown garbage bags with dead plants from the gardens and I went off on a short vacation to the Dominican Republic with my daughter-in-Law. I lounged through the days and enjoyed all the hot sun, blue skies, white sand, turquoise pool water, warm sultry evenings and the fabulous buffet foods. I am sure “The Big Guy” was cooking with abandon, leaping around the kitchen in his Manmade briefs, waving a glass of red wine, gyrating to ‘70s rock music, making cheese toast and creating gourmet extra-cheese Kraft dinners. Alternately, I envision his stomach pulling him down the street to Westney’s for every breakfast and evening meal. It is what it is! I have added a recipe here that will add a little “ray of sunshine” to your day! There is nothing like sipping on a tall frosty Pina Colada to glaze over your eyesight and put you in the mood to search on Google to find a warm tropical spot for a short get-a-way during those cold, dark winter days that are surely coming. I have to say, it will change your perspective and reset your internal clock to Island Time! |
INGREDIENTS 4 Parts white rum 1 1/2 Parts Pineapple Juice 4-5 Pineapple Chunks 3 Parts Coconut Water 4 Tsp Extra Fine Sugar |
INSTRUCTIONS Muddle the pineapple chunks, add sugar, coconut water, juice and rum. You just need to add crushed ice and this recipe is enough for two thirsty seniors on vacation. PS: Any brand of rum will do! |
